Ingredients:

  • Water 8-10 cups
  • Salt ½ tsp
  • Water ¼ cup
  • Zarda meals color 2tsp
  • Zuraiz Sella 1121 Rice (sella) 1 & ½ cup (soaked for 4 hours)
  • Ghee ½ cup (Ideally desi ghee)
  • Green cardamom 3-4
  • Cloves 3-4
  • Sugar ¾ cup or to taste
  • Kewra essence 1tsp

For adornment:

  • Ashrafiyan
  • Dry fruits/nuts
  • Pheeka khoya

Instructions:

  • In a pot, upload water, and convey it to a boil.
  • Add salt. Dissolve zarda meal color within the water, add it to the pot, and blend well.
  • Add rice and convey it to a boil, prepare dinner until the rice is done.
  • Pressure rice and put it aside.
  • In a separate pot, add ghee, green cardamom, and cloves, and saute for a minute.
  • Add boiled rice and sugar. Cover and prepare dinner until sugar totally dissolves (approx.10-15 minutes) on medium-low flame.
  • Place a griddle on the stove and put back pot over the griddle.
  • Put it on simmer for 10 mins.
  • Add kewra essence,ashrafiyan,pheeka khoya, and dry fruits/nuts.
  • Cover and steam cook for 10 minutes.
  • Zarda is ready, add gulab jamun and chum chum for garnishing.
